Fresh Cranberry Salsa

Fresh Cranberry Salsa is an easy year round appetizer that is a little sweet, and a little spicy. Perfect for picnics, outings, game nights, family gatherings, etc. Enjoy fresh cranberry salsa with tortilla chips or with any variety of crackers. Fresh Cranberry Salsa pairs well with cream cheese for that extra party flare. This recipe can be made ahead of time which really helps when you have a busy schedule. Be sure to make space in your freezer and set aside a few bags of freshly harvested cranberries in Autumn. Cranberry appetizers are wonderful and seasonal for your holiday parties and cranberry themed appetizers make a great surprise for a summer cookout.
Ingredients:
1 package (12 ounces) fresh or frozen cranberries
1 cup sugar
6 green onions, chopped
½ cup fresh cilantro leaves, chopped
1 jalapeno pepper; halved, seeded and finely chopped.
Tortilla Chips or Crackers
(Optional 8oz. Cream Cheese)
Directions:
Pulse cranberries and sugar in a food processor, until coarsely chopped. Transfer to a small bowl. Stir in the green onions, cilantro and jalapeno pepper. Modify to your preferred taste for tartness with less sugar and spiciness with peppers. Cover and refrigerate for several hours or overnight. Serve with crackers, tortilla chips, etc. Or, spread cream cheese on a serving tray, drain salsa and spoon over cream cheese.
